Túrós Csusza
Hungarian Cottage Cheese Noodles (for 2 people)
A traditional savory pasta dish with cottage cheese, sour cream, and crispy bacon

Ingredients:
- 200 g wide egg noodles or square pasta (e.g. "csusza" or broad noodles)
- 150 g cottage cheese (preferably full-fat or medium-fat)
- 100 g smoked bacon or pancetta
- 100 g sour cream
- A pinch of salt
- Freshly ground black pepper (optional)
Instructions:
1. Cook the pasta in a large pot of salted boiling water until tender. Drain and set aside.
2. Dice the bacon into small cubes and fry it in a pan until golden and crispy. Don't discard the
rendered fat – that's flavor!
3. Toss the cooked noodles with the bacon fat and the cottage cheese. Stir in the sour cream
until everything is evenly coated.
4. Sprinkle the crispy bacon bits on top, add a touch of black pepper if you like, and serve
immediately while hot.
TIP: For an extra rich finish, you can bake the assembled dish in the oven at 180°C (350°F) for 5–10 minutes before serving.
