Rustic Hungarian Noodle Soup (serves 2) 

A comforting soup with toasted pasta, potatoes, and paprika – simple, humble, and full of flavor. 

Ingredients:

  • 50 g broken dried pasta sheets (or wide egg noodles, roughly crushed)
  • 1 medium potato, peeled and diced
  • 1/2 onion, finely chopped
  • 1 garlic clove, minced
  • 1 tbsp oil or lard
  • 1 tsp sweet Hungarian paprika
  • 500–600 ml water
  • Salt and pepper to taste
  • (Optional: a small piece of smoked bacon or sausage for a heartier version)

Instructions:

1. In a dry pan with a little oil or lard, toast the broken pasta until golden brown. Remove and

set aside.

2. In the same pan, sauté the onion and garlic until translucent.

3. Add the diced potato and paprika, stir quickly, and pour in the water.

4. Season with salt and pepper, return the toasted pasta to the pot, and cook for about 15

minutes – until both the potatoes and pasta are tender.

5. Serve hot, optionally with fresh bread on the side.
